1 (12-oz) package sausage crumbles or breakfast sausage
1 tablespoon balsamic vinegar
1 teaspoon minced garlic
1/2 teaspoon dried oregano
1 tablespoon chipotle chili powder (optional)
3 ounces light cream cheese
1/2 cup crumbled feta cheese
1/2 cup shredded cheddar cheese
20 regular-sized jalapeños, slice lengthwise and remove seeds


Preheat oven to 400°F.
Crumble sausage and cook in a skillet over medium-high heat until well browned; drain.
Return sausage to skillet. Add chili powder (if using), garlic, vinegar, and oregano; mix well.
Now switch to low heat and stir in cream cheese. Mix until well combined. Turn off the heat. Add cheddar and feta into the sausage mixture.
Press large spoonful of sausage mixture onto each jalapeño half; place on baking sheet. Bake for 12 to 17 minutes until the filling is hot and jalapeño edges begin to wilt.
